Until September 2023, guests and locals in Madrid can experience the flavors of the Riviera Maya at the beach bar “Aquí me quedo” Here I Stay.

Rosewood Villa Magna will feature a new, unique gastronomic space in the capital. The gardens of the centrally located hotel will be transformed, for a limited time, into “Aquí me quedo,” a vibrant adults-only beach club from Rosewood Mayakoba in Mexico. This marks an exclusive collaboration between the two Rosewood properties, offering the flavors of the Caribbean coast of Mexico in the exclusive Salamanca neighborhood.

The experience will be available throughout the summer, offering travelers and locals in Madrid a culinary journey through the Riviera Maya without leaving the city. “Aquí Me Quedo” is the name of this new gastronomic space. Delicately illuminated with the night sky as a backdrop, it is the ultimate destination to feel like you’re in the Riviera Maya, with every detail carefully crafted including hammocks, umbrellas, palm trees, and sand.

Espacio Aquí me quedo “Aquí me quedo” Space

The new space will offer a special menu brought directly from the original beach club “Aquí Me Quedo” at Rosewood Mayakoba. The most prominent dishes will include recipes from the Mexican Caribbean that celebrate classic Spanish elements, including locally made chorizo and fish from the Cantabrian Sea border. The menu will feature ceviche, salads, and tacos, with preparations such as:

  • Fish ceviche with curry, featuring the catch of the day, mango, cucumber, cilantro, basil, soy sauce, green curry, and red onion.
  • Carrot salad with pickled radishes and lime pesto. “TJ” style shrimp tacos with Mexican salsa, garlic, chipotle mayonnaise, and melted cheese.
  • Ribeye tacos with chorizo, jalapeño chili, spring onion, guajillo chili sauce, and corn tortillas.

The experience will be accompanied by live music to recreate every detail of the Mexican beach club, with a DJ on Thursdays, Fridays, and Saturdays. A selection of cocktails crafted in the style of “Aquí me quedo” will be served, featuring mezcal from “The Lost Explorer” brand, along with beverages, beers, and soft drinks.
